st. patricks day treats

Full disclosure, I made these last year. You know, when I wasn’t trying to lose the rest of the baby weight. I thought I’d share them and live vicariously through those of you who want to have something sweet for St. Patricks’s Day.

I love a good excuse to make fun and festive holiday treats. I also have a four-year-old who loves helping out in the kitchen, unless I want to make them after she’s sleeping, I try to find things that easily lend themselves to toddler hands. If we can avoid the stove, even better!  It’s nice to only worry about something getting spilled, instead of having to worry about more dangerous scenarios. That’s why I love making homemade Muddy Buddies.

She gets to scoop out the cereal and pour it into the bowl, she stands on her little stool and thinks she’s running the whole show. I’m confident that these will be some of my favorite memories of this sweet toddler time.

This recipe makes a huge batch, be prepared to share it with friends and neighbors. You can even bag it up in clear cellophane bags and tie with a festive ribbon. This is a treat that will be appreciated by all.

St. Patricks Day Muddy Buddies

Ingredients
  • 9 cups Chex cereal
  • 1 cup semi-sweet chocolate chips
  • ½ cup peanut butter
  • ¼ cup butter
  • 1 teaspoon vanilla
  • 1½ cups powdered sugar
  • green sprinkles
  • 1 cup green M&M's
Instructions
  1. Measure out Chex cereal and set aside.
  2. In a microwave safe bowl, add chocolate chips, peanut butter, and butter. Microwave on high 1 minute, if this isn't enough microwave in 30 second intervals until smooth.
  3. Add 1 teaspoon of vanilla.
  4. Pour mixture over Chex cereal and coat well.
  5. Add mixture to 2 gallon bag, along with powdered sugar.
  6. Shake well to coat.
  7. Spread mixture on wax paper to cool.
  8. Add sprinkles and M&M's to mixture while cooling.
